Peach Clafoutis
Celebrating stone-fruit szn with Peach Clafoutis!
INGREDIENTS
1/2 cup all purpose flour
1/2 cup granulated sugar
4 large eggs, room temperature
1 cup whole milk, room temperature
1 cup heavy cream, room temperature
1 1/2 teaspoon vanilla extract
1/8 teaspoon salt
2 tablespoons butter, melted
2 lbs ripe, but firm, peaches; sliced into wedges
Confectioners' sugar, for dusting
METHOD
Preheat your oven to 350 F and grease your baking dish.
Sift flour, salt and sugar into a medium-sized bowl.
In another larger bowl, whisk together eggs, milk, cream and vanilla until well incorporated.
Pour the egg mixture into your flour mixture 1/4 cup at a time; stirring well after each addition. Add 2 tablespoons of melted butter and give your batter a final stir.
Arrange your peach wedges in a single layer on your baking dish.
Pour the batter over the peaches.
Bake for 60-75 minutes until the clafoutis is set and golden brown on top. It should be firm but wobbly in the middle (ya know, like many of us during this pandemic...).
Let cool slightly, dust with confectioners' sugar and enjoy!
