Garlic Butter Smashed Potatoes

INGREDIENTS

2 lbs Yukon gold potatoes

6 tablespoons unsalted butter
6 garlic cloves, minced

2 tablespoons dried oregano or italian seasoning

2 tablespoons onion powder

Salt and pepper, to taste

Fresh Italian parsley, for garnish

METHOD

Preheat your oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray.

In a large pot of boiling salted water, cook potatoes until tender, about 15-20 minutes; drain well.

Melt butter and mix in garlic, italian seasoning, and onion powder.

Place potatoes onto the prepared baking sheet. Using a potato masher or fork, carefully smash the potatoes until flattened but still in one piece. Top with butter mixture, get in allllll those crevices! And sprinkle with salt and pepper.

Bake for 18-20 minutes, or until golden brown and crisp.

Top with chopped italian parsley and enjoy!
